Garden-Style Primavera

Not only does this recipe contain cancer-fighting

brassica veggies, but is rich in lycopene as well!

1 tablespoon olive oil

1 cup cauliflower florets

1 cup broccoli florets

1/2 cup sliced red pepper

1 teaspoon minced garlic

2/3 cup of diced tomatoes, with juice

1 tablespoon basil

1/8–1/4 teaspoon ground pepper

2 cups of rice noodles, cooked

3 tablespoons soy parmesan, grated

  1. Heat oil in large skillet.
  2. Add cauliflower, broccoli, red pepper, and garlic

    and sauté for 3-5 minutes.

  3. Add tomato, basil, and pepper and simmer for

    5-6 minutes.

  4. Add rice noodles and toss well.
  5. Top with soy parmesan and serve.
