This salad is my staple go-to in the summer (or any time I wish it was summer!). It is packed with cancer-fighting DIM, EFA-rich sunflower seeds, and lycopene-loaded tomatoes. Enjoy!
Broccoli Salad
Serves 4
? cup nonfat mayonnaise
? cup erythritol
1 tablespoon white vinegar
1 large head of broccoli
1 onion, diced
4 pieces turkey bacon, cooked and crumbled
? cup goat cheese, crumbled
? cup baby tomatoes
? cup sunflower seeds
Combine mayonnaise, erythritol, and vinegar. Mix well, cover, and place in refrigerator for one to two hours.
Cut broccoli into small flowerettes. Add onion, bacon, goat cheese, tomatoes, and sunflower seeds.
Mix in dressing and serve.
